Rice like all seeds is a living,
breathing organism. The rice kernel is hygroscopic
and can at it's higher level of moisture content
increase and decrease it's moisture level
in keeping with it's surrounding. A rice kernel,
and especially a dry rice kernel, is very
sensitive to changes in the air surrounding
the kernel. At a certain moisture content
it becomes difficult for the rice kernel to
re-absorb moisture without fissuring occurring.
Using a correct relative humidity of the air
used for conditioning the rice will result
in substantial benefits including increased
milling capacity and milling yield. Starting

Normally at harvest time, the variation
of moisture content from one kernel to the
next, can be as much as 30%. Drying reduces
this deviation, but not nearly as much as
expected. We have seen a variance of 13%
after three passes through a columnar dryer.
We also frequently see a 6% deviation after
