  Rice like all seeds is a living, breathing organism. The rice kernel is hygroscopic and can at it's higher level of moisture content increase and decrease it's moisture level in keeping with it's surrounding. A rice kernel, and especially a dry rice kernel, is very sensitive to changes in the air surrounding the kernel. At a certain moisture content it becomes difficult for the rice kernel to re-absorb moisture without fissuring occurring. Using a correct relative humidity of the air used for conditioning the rice will result in substantial benefits including increased milling capacity and milling yield.
